Nancy will be the first to admit that a deli in a Japanese train station is the last place she ever thought a fascination with cheese would begin. But on a commute home from her teaching job, Nancy noticed a selection of French cheeses in a deli at Shin-Osaka station and decided to take a look. From that day forward, Nancy found her taste for cheese developing and taking her in new directions: ordering cheese plates at the end of meals, building a cheese book collection, and visiting local cheese shops on vacations. Upon entering The Fine Cheese Company in Bath, England, Nancy looked around and envied the owners, and, for the first time, imagined the possibility of her own shop.

 

  In April 2007, she opened Nancy’s Cheese, a boutique cheese shop in Harbord Bakery. In October 2008, Nancy  moved to her own location at 260 Dupont  Street. Nancy graduated from the Cheese Education Guild in 2006.
